Fattoria La Valentina was founded in 1990 in Spoltore, a village nestled amongst the Pescara hills on the central Adriatic coast. Abruzzo is two-thirds mountains and hills and one-third coastal terrain, prime conditions for grape growing. Producers here have historically made industrial bulk wines. In recent years several artisan producers have arrived on the scene and are turning out top quality wines from Abruzzo's indigenous Montepulciano and Trebbiano varietals. La Valentina is at the helm of this group.

Following initial and extensive viticultural research, Di Properzio began a quest for quality and promoting Abruzzese DOCs. Two major developments in 1998 supported this goal: initiating the Binomio project with Stefano Inama and hiring Luca D; Attoma as winemaker. 

While taking a very traditional approach to farming and employing a variety of organic and biodynamic farming methods, Di Properzio also user the most current technology to ensure that the fruit's integrity is maintained from grape to glass.

The gathering wine we are starting off with is the DOC Montepulciano d'Abruzzo Cerasuolo  a rose of 100% "bled" Montepulciano in stainless steel.

The first course we are offering is a Squid, Caponata and Arugula dish to be paired with DOC Montepulciano d'Abruzzo 100% Montepulciano, 20% of the wine is refined for 15 months in large oak and 2nd passage barrique.

Second course is Cacio e Pepe on our house made squid ink spaghettini. For this course we are pairing the DOC Montepulciano d'Abruzzo "Spelt" 100% Montepulciano-vineyard selection, 50% in barrique and 50% in 20 hl oak slavonian barrel 1/3 large oak, 1/3 barrique.

Third course pairs our oven roasted Octopus with white beans and Green Sauce with the DOC Montepulciano d' Apruzzo "Bellovedere" 100% Montepulciano single vineyard, vinified in 40 hl conic slavonian oak barrel, refined 18 months par in barrique, part on 40 hl oak slavonian barrel and part in concrete.

Our final course pairs Affidelice au Chablis cheese with apple and house made bread with the DOC Montepluliano d; Abruzzo "Binomio" from 9.5-acre vineyard, 100% old vine Montelpulciano "Africa" clone, 18 months in barrique. Produced in conjunction with Stefano Inama.
